Ube (pronounced OO-beh) is a purple yam, Dioscorea alata, that has been cooked and celebrated in the Philippines for generations. It's the star of classic desserts like ube halaya (a sweet, creamy jam), ube ice cream and ube bread, and in recent years it has become one of the most-loved café flavors in the world.
What does ube taste like?
